Black-eyed pea relish

One of my favorite hobbies is cooking. I love to try out new recipes as well as make up my own. I adapted this from a recipe I found in a Southern Living magazine. I hope you find it as delicious as we did!

1/4 cup fresh lime juice

3 tbsp chopped fresh cilantro

3 tbsp minced Candied Jalapenos (found a jar at Albertsons)

1 garlic clove minced

1/4 tsp sea salt

Two cans of black-eyed peas, drained and rinsed

3 or 4 green onions, diced

1/4 cup diced red bell pepper

2 tbsp olive oil

2 tbsp Candied Jalapeno juice

Toss together to coat and cover and chill for 12 hours
